Waiting for the barge to come in so that the oysters can be unloaded. A hard day’s work, that is done no matter what the weather. On cold, windy days it can be the worst, with the barges bobbing about. However, a sunny day can be just as uncomfortable. Yet, the oyster harvesters enjoy the work.

When the oysters are first brought in, they’re tiny. Most are about a millimetre which similar to grains of sand. Tney’re grown from about a millimetre to about 8 mm and need to be treated with a lot of care. However, most of that growth happens inside. It’s only when they’re about 3 mm that they are out into the swell. That’s when they start growing to the size that we are more accustomed to see.
